Are you using an emulator? If so, you may have just accidentally turned background layers 1 and 2 off. If you are playing on the SNES, then it's probably some sort of glitch. Does this happen with any of your other games though? because there might be something wrong with your SNES.

DK64 is deffinetly better than any DK game after it, but I dont think it meets DKC's standards.

That sounds good for the wii u because you know, it's HD (It would be the only reason I would get a wii u). I have to say though, play DKC on a tiny HD TV and it looks pretty good! (or just a small window on your computer if you have an SNES emulator.)
